The big santoku is a traditional Japanese knife with a classic blade geometry: a wide and massive sheet-shaped blade with a point descending to the cutting edge.
This is a perfect substitute for the more familiar European Chef.
With a center of gravity shifted forward, santoku performs all the same actions and provides great ergonomics: it can be managed back and forth, up and down, with the point remaining in contact with the board all the time.
