The Samura Mo-V Utiliity kitchen knife is called so with good reason: it can be used to perform a great deal of actions in any kitchen, and it is perfectly suitable for processing a variety of products (greens, vegetables, fruits, and dainties). A thin blade with a hardness of 59 HRC is ductile enough to withstand severe lateral loads and cope perfectly well even with fairly solid foods.
For hygiene considerations, the blade is separated from the handle with a metal bolster, with a light weight and optimal balance making it much easier to manipulate.
