Slicing Knife. Filigree Kitchen Work


The slicing knife is an auxiliary kitchen tool designed for slicing sausages, sandwich meat or delicacies. Sometimes, it is also called a gastronomic knife, a fine slicing knife or a slicer.


Although very long, this knife is not very wide and has a smooth blade from the handle to the middle part of it, which abruptly tapers to the point and eventually acquires a spear-like shape. Its length can range from 20 to 45 cm, but 20-25 cm long blades appear quite sufficient for home use.


Such parameters are not accidental. The slicer is maximally adapted to slice in one movement: only then everything turns out even and accurate. Knives with a shorter blade do not cut, but literally "saw" the product in several passes, resulting in a careless "stepwise" cut. Not very nice to treat your guests with that kind of slices.


A gastronomic knife is typically designed to cut with the "pull" movement, i.e. from the part at the butt with gradual transition to the blade point. For your hand not to rest against the cutting board or table, it is slightly raised towards the end of the movement. That is why the slicers have their cutting edge slightly raised to the point, i.e. rounded.


Many people disregard such a useful tool, giving preference to multifunctional santoku, a chef's knife and a utility knife for these purposes. Nevertheless, it should be borne in mind that the latter is too short to ensure the proper cut quality. Moreover, it will be of no use for oversized products. Sausage and ham will simply adhere to excessively wide knives, thus impeding the movement of the blade. Therefore, whichever way you slice it, it is better to use dedicated slicing knives for such a specific work.


Of course, the cut aesthetics may not be that important in the home kitchen, but a neat slice looks even tastier! In addition, slicers are very often used for cooking dishes of the Japanese cuisine such as sushi, sashimi, and rolls. In such a case, accuracy of actions, impeccable work, blade sharpness and fineness are essential, otherwise the treat will simply fail. There are good reasons why the traditional Japanese knife - Yanagiba - is also attributed to slicers.


However, Yanagiba has a single bevel grind and requires certain skills and expertise to operate it properly. The same cannot be said for ordinary slicing knives, which can easily be used by everyone.

Although they may not fully correspond to the slicer's functionality, this is quite reasonable as far as the home kitchen is concerned. After all, such a long blade is very convenient to slice oversized products. For example, watermelons, melons, baked meat pieces or a large cake can easily be cut with a single sweep.
